maison robert


Robert Reeb and his daughter Katia are true pastry artisans.  A few weeks ago I signed up for a class at their family-owned shop, Maison Robert. Within a week I was in the Maison Robert kitchen with two other attendees for our lesson in authentic Parisian macarons. During the instruction, I decided against taking photos. I truly wanted to take in the experience.

Robert and Katia covered the history of the macaron, proper techniques for tempering chocolate, four different ganaches and invaluable tips for pastry making in general. Did you know making macarons is super challenging? The chocolate macarons were our first attempt and they didn't have "feet" {see second photo} -- which I learned is très important! However, our raspberry macarons were spot-on.

There was SO much whipping, delicate piping and banging sheet pans that by the end of class {four hours later} my head was spinning! The class ended with a nice, relaxing lunch. Katia divided and packed our goodies while we ate. I brought home three dozen macarons in sea salt caramel {woohoo}, chocolate and raspberry. 

I have been in macaron heaven. ever. since. Fun times.

  5. this sounds like such an amazing class to take. I've always wanted to make macaroon but have heard they were pretty challenging. I really need to see what kind of classes are offered out here...I've never thought of signing up for a one day learning class.

  6. That sounds like the perfect day! And three dozen macarons? Please let me know if you need help finishing them! I am so in love with that chair photo, the colours and wood grain are just beautiful, it really tells a lot about the shop. Will you continue to make macarons at home? I've only attempted once and that was enough to convince me to stick to buying them.
