My mom made 'breakfast-at-night' at least once a week when I was growing up. My BFF does this for her family now and when we chat about it, it brings back childhood memories. Surprisingly, one of my favorite breakfast items was Salmon Croquettes as a kid. I've adapted this recipe with the changes noted below. Rather than getting too "breakfast-sy" {Yup, I made that word up. And you're welcome} I decided to serve it w/peas & rice for a weeknight meal. Enjoy!
Ingredients
1/4 cup quality Mayo (I prefer Duke's)4 teaspoons fresh lemon juice
2 1/2 teaspoons Dijon mustard
1/4 cup finely chopped green onions
2 tablespoons minced red bell pepper
1/2 teaspoon garlic powder
1 tablespoon Old Bay seasoning
1/8 teaspoon ground red pepper flakes
2 (6-ounce) packages skinless, boneless pink salmon
2 large eggs, lightly beaten
1 cup Panko (Japanese breadcrumbs)
1 tablespoon melted butter
1 tablespoon chopped fresh parsley
1 teaspoon finely chopped capers
1/2 teaspoon minced garlic
1/8 teaspoon salt
2 tablespoons of olive oil for browning the patties
Preparation
Combine all ingredients, stirring well. Shape mixture into patties and chill in the fridge for 15 minutes to firm them up. Next, heat oil in a large skillet over medium heat. Place patties in the pan (be careful not to crowd them so they'll brown) and cook for 3-5 minutes on each side. Place on paper towels to drain excess oil and enjoy!-Shelly
